Simón has spent his entire senior club career at Athletic Bilbao after coming through the youth academy, farm team and reserves, with 200 first-team appearances by 2025 since his senior debut in 2018. His senior Spain debut followed in 2020 and tournament minutes have come at UEFA Euro 2020, the 2022 World Cup, UEFA Euro 2024 and the 2023 UEFA Nations League.
